MEXICAN DOUGHNUTS (Sopaipillas)

 

A fresh batch I made this morning!

I am currently obsessed with making these because they are so easy to make and I am no longer afraid of cooking with yeast. They are simply irresistible!

Ingredients:
-1 Package of dried yeast
-1/4 cup (2fl oz/60ml) warm water 40 C
-1 cup (8oz/250ml) milk
-2Tbsps lard/vegetable shortening (I often use butter)
-1tsp salt
-2tsps sugar
-3 cups (15oz/470g) plain flour
-1tsp baking powder
-Vegetable oil for deep-frying

Method:

-Add yeast to warm water, leave until foaming.

-Bring milk to the boil, add fat,salt and sugar and cool to 110F/40C and stir into yeast mixture.
-Sift flour and baking powder into a large bowl and add yeast mixture and stir to a soft dough.
-Turn onto a floured surface and knead until smooth and elastic (approx 10 mins).
-Cover with a teatowel and rest for 20 mins.
-On a slightly floured surface, roll out to ? inch (6mm).
-Cut into triangles or squares approx 3 inch (7.5cm).
-Heat oil to 400F/200C/until a bread cube browns in 30 seconds.
-Fry dough 3-4 pieces at a time until golden.
-Turn out onto paper towels.
-Sprinkle with sugar and cinnamon while still warm.
